Oh! the day on my juice fast when I had the genius idea to lightly steam the veggies
..but I mean lightly! just enough to take away the 'raw' flavour and give it that steamed taste
When I tasted the fruits of this creative take on juicing ..it was a win on the savoury front!
Becoming not just my own favourite juice above all else,
but a favourite for many fellow juicers too

2/3 cup Cashews (soaked)
1/2 head Cauliflower (lightly steamed)
2 Carrots (lightly steamed)
1 Lemon
1 clove Garlic
1 sml red Capsicum
1/2 tsp Veggie salt
1/2 tsp Cumin ground
1 cup Water
♨ steaming pot: water, medium-high
steam cauli & carrot separately: set aside to cool
steam cauliflower: 5mins
steam carrot: 3mins
👏 strain: nuts, rinse well
🍥 juice: all ingredients in listed order; except cashews, salt, cumin & water
🍥  blend: nuts & 1/2 cup water, til smooth
add remaining 1/2 cup water, juice, salt & cumin: combine well

1 sheet Paper Towel (folded: half, half, thirds)

measure lukewarm water: double the above egg amount
add water to eggs
add salt: beat in single direction
strain: mixture, into heatproof bowl (aim: smooth & foamfree)
♨ steaming pot: egg mixture in heatproof bowl
cover: placing folded paper towel under lid edge = steam release
steam: with water boiling, 8mins
ready: when spoon dipped in mixture comes out clean

It cannot be stated enough that: every meal should have, begin and end - with Vawaiian!
Growing up, us kids absolutely loved a particular dish that our Mum would make; but because of it's ingredients, it was a rare treat ..and one that suited our kiddy sweet toothes a little too much, if you understand me. Now that I don't do naughty anymore, I determined that this dish shan't depart from my menu. So to cease the blah blah blahs, I introduce to you my [drum roll]
dairy-free, gluten-free, sugar-free, gelatin-free, fully vegan ... Vawaiian Salad!
So healthy compared to the naughty recipe
..that I've taken to having it for breakfast hehe
Yummmaaayyy!!!

500g Nudie Vanilla Coconut Yoghurt*
4 tsp Erythritol**
2 tsp Vanilla Extract**
(I use a Vanilla Vegan Protein Powder to add an extra health kick)
2 tsp Strawberry Powder**
1 tub Shredded Coconut*
440g tin Pineapple Pieces in Juice (NOT syrup)

1 tub Strawberries* (quatered)
1/2 tub Green Grapes* (halved)
1/2 tub Crimson Grapes* (halved)
​👏 bowl: coconut yoghurt, erythritol; combine well°
add: vanilla, strawberry powder; combine well°
add: shredded coconut; using yoghurt tub to measure amount
add: pineapple pieces, including juice; combine well
refrigerate: covered, overnight
👏 next day, add: cut fruit; using  yoghurt tub to measure amount
refrigerate: few hrs before serving; to allow flavours to infuse
Serves: 1 - cause you won't want to share ​😋 hehe

​* the yoghurt tub is used to measure the coconut & fruit amounts

** these ingredients substitute the key ingredient in the naughty recipe; and successfully so, as the dish made using this recipe tastes identical to the dish made using the naughty recipe; so they're not really omittable. tray: 3cm dough balls (flattened), 3cm space between all
bake: 7mins, til edges start browning
remove: cool before serving

This really is a fab nut loaf!
Moist, rich in flavour and pairs nicely with a helping of Scrummy Curry Pesto on top;
certainly tis a yummy gluten-free, sugar-free, dairy-free vegetarian savoury.

2 tbsp Coconut oil
1 Onion (diced)
2 stalks Celery (diced)
2 cloves fresh Garlic (diced)
1 red Capsicum (diced)
1 lge Carrot (grated)
1 tsp Oregano (dried)
1 tsp Paprika powder
1/2 cup green Lentils (washed)
300ml Vegetable stock
1 cup mixed Nuts - pecans, hazelnuts, brazil nuts, walnuts
2 cups Almond meal
3 lge Eggs (lightly beaten)
pinch of Veggie salt
♨  Pot: medium heat, 1 tbsp Coconut oil
add onion & celery: 5mins, til soft
add garlic: +5mins
add 2nd tbsp Coconut oil, capsicum & carrot: +4mins
add oregano & paprika: +1min
add lentils & vegetable stock
simmer: 25mins, til liquid fairly absorbed
set aside: cool
​🍥  Blend: nuts, til 'meal' consistency
👏  Mix: cooled veg mixture, nuts, almond meal, eggs & salt
♨  Preheat oven: 180°
baking dish: coat with coconut oil, lightly
spoon: mixture into dish; even & press down
cover with foil & bake: 30mins
remove foil & bake: +20 mins, til firm when pressed gently

Scrummy Curry Pesto

This pesto, I just happened upon one day when I was making myself a big batch of Curry Tea. I didn't want to simply throw away the curry leaves I had just steeped for my tea ..so I decided to make a pesto with them.

It has been a hit with the dishes I have coupled the pesto with for a combined lunch the next day. PHAB Walnut Loaf and this pesto go scrumptiously together; mixed through some Egyptian Spinach Noodles with EVO & Veggie Salt is delish too!

4 cups Dried Curry leaves (steeped)
1 Red Onion (chopped)
2 cloves Garlic (crushed)
1/3 cup Sun-dried Tomatoes
1 tsp Chinese Five Spice
1/3 cup Coconut (desiccated)
1/2 Lemon (juice)
1 tsp Veggie salt
♨ Pot: bring 2L water to boil
remove from heat, add: curry leaves; leaves submerged
steep (off hot plate): 2hrs, covered
strain: leaves (keep steeped leaf water for Curry Tea)
​🍥  Blend: all listed ingredients & 2/3 cups leaf water
add more leaf water, to desired consistency

    On February 11th 2018, I bowed in repentance and with a contrite heart before my God.
    Uplifting my tearful plead for forgiveness and intense petition to be a vessel meet for His purpose, I prayed with thankfulness for opening my eyes to the truth.

    I was unaware of the path God had now set my feet upon  👣  Praise the Lord!
    Not only, as the verse says, “old things are passed away; behold, all things are become new”, but He has given me new desires of my heart. [Ps 37:4]
    From one who before had absolutely no interest in time invested in cooking, from one who was bound by seemingly unconquerable attachments to particular foods, from one who though knowing the truth would indulge my lower passions and give in to appetite rather than exercise strength of will and control by exercising higher powers. From this such one.. comes this blog  💞  glory to God!
     
    Through this blog I hope to share the journey that God takes me on in exploring the ‘science above all other sciences’ - cooking! [MM270.6]
    As He leads me into new heights of health exploration, I pray you can join in to partake of the blessings also.
    And it is my prayer that He leads you in the most monumental blessings that make up the testimony of your own experience  🙏

    📚  It is for our own benefit to keep every gift of God fresh in our memory. Thus faith is strengthened to claim and to receive more and more. There is greater encouragement for us in the least blessing we ourselves receive from God than in all the accounts we can read of the faith and experience of others. The soul that responds to the grace of God shall be like a watered garden. His health shall spring forth speedily; his light shall rise in obscurity, and the glory of the Lord shall be seen upon him. Let us then remember the loving-kindness of the Lord, and the multitude of His tender mercies. Like the people of Israel, let us set up our stones of witness, and inscribe upon them the precious story of what God has wrought for us. And as we review His dealings with us in our pilgrimage, let us, out of hearts melted with gratitude, declare, “What shall I render unto the Lord for all His benefits toward me? I will take the cup of salvation, and call upon the name of the Lord. I will pay my vows unto the Lord now in the presence of all His people.” Psalm 116:12-14. DA 348.2
