This post is dedicated to a dear sweet friend
who kindly gave me a whole stack of farm-fresh organic rhubarb.
Well I certainly had a most delicious two weeks of creating different dishes
for breakfast, dinner, and dessert with this versatile vegetable.
And many a more scrummy ideas were in tow  ..but alas! I ran out of barb..

Following is a selection from my creations 💝 enjoy!

BerryBarb + Oats

3-5 sticks of Rhubarb
​(leaves trimmed, chopped)
1 cup Mixed Berries (frozen)
200ml Cococoast Watermelon Water
¾ cup Rolled Oats
 
 
♨️ sml pot: all ingredients
stew: 16mins, med-hi heat 
 
Serves: 1

Pear+Barb Porridge

3-5 sticks of Rhubarb
​(leaves trimmed, chopped)
1 sml Pear (chopped)
200ml Dewlands Guava & Apple Juice
¼ cup Semolina
 
 
♨️ sml pot: all ingredients, except semolina
stew: 12mins, med-hi heat
add semolina: +4mins, med heat; mix in immediately
 
Serves: 1

PassionBarb Pudding

​3-5 sticks of Rhubarb
​(leaves trimmed, chopped)
½ cup Mango (frozen, chopped*)
½ cup Pineapple Chunks (chopped*)
200ml Cococoast Passionfruit Coconut Water
2 tbsp Chia Seeds
 
*mango & pineapple do not break down when stewed, so you will need to chop these to the size you are happy to eat in your pudding
 
 
♨️ sml pot: all ingredients, except chia
stew: 16mins, med-hi heat
 
👏 bowl: stewed fruit
add chia seeds*: combine well
 
*chia only takes ~16mins to thicken, so you can enjoy this warm, or refrigerate and enjoy it later as a cold dish
 
Serves: 1

YBarbuzb Jelly

3-5 sticks of Rhubarb
(leaves trimmed, chopped)
1 lge Orange (peeled, chopped)
300ml Cococoast Yuzu Coconut Water
2 tbsp Psyllium Husks
5 tsp Stevia
 
 
♨️ sml pot: all ingredients, except psyllium
stew: 16mins, med-hi heat
 
👏 bowl: stewed fruit
add psyllium husks: combine well
 
❄ refrigerate: ~1hr*
 
*psyllium only takes ~16mins to thicken, so the refrigeration time is just to cool the jelly
 
Serves: 2

Barbalo Soup

3 med Spud Lite Potatoes (chopped small)
​2-3 sticks of Rhubarb
(leaves trimmed, chopped)
500ml Water
1 tbsp Onion Soup (powder)
1 tsp Veggie Salt
½ tsp Garlic (powder)

♨️ sml pot: all ingredients
stew: 30mins, med-hi heat; until potato soft
 
*you can enjoy this soup clear & chunky, or whiz it and enjoy it thick & smooth, or I like to lightly mash it and enjoy it thick & a little chunky
Serves: 1

Barb Bread

6-7 sticks of Rhubarb*
​(leaves trimmed, chopped)
200ml Pineapple Juice*
2 tsp Chia Seeds*
100g EV Coconut Oil (melted)
400g Gluten Free Co. Banana Bread Mix
 
*you are wanting to achieve 250g of stewed fruit mix to add to the bread mix
 
 
♨️ sml pot: rhubarb & pineapple juice
stew: 16mins, med-hi heat
​👏 bowl: stewed fruit
add chia seeds: combine well
sit: 16mins
add oil: combine well
add bread mix: combine well*
spoon mix: into baking paper lined 20cm round cake tin
 
*I found adding the bread mix in small amounts gradually, and mixing in well between worked well to ensure it was evenly combined
 
♨️ oven: preheated 150°
bake: 50-60mins
stand to cool: 16mins

​Serves: 12

..another simple salad sure to delight, that you can add to your Sabbath lunch menu options

​1/2 Red Onion (diced, soaked)
7 stems Kale (trimmed from spine, chopped)
2 stems Celery (incl. leaves, chopped)
1 cup Endive (chopped)
1/2 cup Black Olives (sliced)
1/4 cup Almonds (slivered)
1/4 cup Roasted Edamame
Dressing:
​1 Lemon, juice of (fresh squeezed)
1/3 cup Water
3 tbsp Braggs Soy Sauce
1 tsp Onion Powder
1/2 tsp Garlic Powder
​👏 bowl: finely diced onion
sit: in water to soak while preparing the remaining ingredients
👏 jar: all listed dressing ingredients; shake well
👏 bowl: all salad ingredients, except dressing; toss through well
drain: soaked onion, add to salad; toss through
add: dressing to salad 30mins before serving,  to allow the dressing to make the kale tender

7 Carrots (peeled, grated)
4 cloves Garlic (minced)
1 tbsp Coriander Ground
4 tbsp EVO Oil
3 tbsp Verjuice
1 tsp Salt
1/4 tsp Cayenne Pepper
​👏 jar: garlic, coriander, oil, verjuice, salt, cayenne; shake well
👏 bowl: grated carrots, dressing; combine well

❄ refrigerate: 5hrs

Fruit Salad
..thought you knew what a fruit was? think again. Google for yourself to find out the botanic classifications of your favourite plate of dinner veggies; and then! wait til you find out that there is not actually any such classification as vegetable - but rather that vegetable is simply a culinary term.. ha!
So with thus introduction, ere below is a refreshing savoury fruit salad for you: again increasing the medicinal qaulities twofold by eating leafy greens with fruits.

2 stems Kale (trimmed from spine)
2 ripe Truss Tomatoes
2 punnets Medley of Mini Tomatoes
2 Cucumbers
1 yellow Capsicum
1 orange Capsicum
1 red Capsicum
2 lge Dill Gherkins
7 lge Green Olives
2 handfuls Baby Spinach
👏 bowl: combine salad ingredients, in following order
add: chopped kale & truss tomatoes; lightly dust with herbamare
add: chopped mini tomatoes & cucumbers; lightly dust with herbamare
add: chopped capsicums; lightly dust with herbamare
add: sliced gherkins & olives
add: washed baby spinach; lightly dust with herbamare
combine: all ingredients well
* sit for 30mins before eating; to allow the fruit's juices to make the kale tender

Kiwi + Kale Salad
..my how my mind was blown! the day I discovered the flavour sensation of adding leafy greens to my morning fruit salad. I used kale simply because that it was I had in my fridge at the time, but I have since tried baby spinach and....... ummm!! yummm!!! When leafy greens are eaten with fruit, their medicinal  qualities increase twofold.

Best Fruits Forever Salad
..this simple salad is refreshing not just to the palate, but also to one's health
Have this for breakfast every morning and you'll be giving your immune system a boost! with the following being just a few of the health benefits:
  • Apples: provide living water. The fruit acids in apples help cleanse the liver. Apples starve out bacteria, yeast, mold, other funguses, and viruses from the intestinal tract and liver. Great for dissolving gallstones.
  • Oranges: provide a combination of calcium and vitamin C. Oranges are a great fruit that allows for easy absorption and conversion of nutrients. They have an ability to uproot and disperse sludge and sediment that can settle in the gallbladder. 
  • Mangoes: have a unique phytochemical compound that helps the liver's immune system destroy the pockets of bacteria that create liver abscesses. Mangoes help your liver from aging and cells from dying while improving bile production.
  • Apricots: offer easily assimilable vitamin A, are rich in antioxidants, and help prevent aging.
  • Kiwis: fruit acid has a dissolving effect on gallstones unlike any other. Kiwis also provide various nutrients upon which the liver relies.
  • Coconut: when only used in small amounts, is very helpful in lowering viral and bacterial loads.
These are just the fruits that I happened to have in my fridge. Add some banana if you like; berries, grapefruit, pitaya, papaya, grapes, fresh figs ..they are all packed with healthful life giving properties.
Add some kale too or baby spinach, like in my Kiwi + Kale salad, and boost your salad's medicinal qualities by twofold!

Oh! the day on my juice fast when I had the genius idea to lightly steam the veggies
..but I mean lightly! just enough to take away the 'raw' flavour and give it that steamed taste
When I tasted the fruits of this creative take on juicing ..it was a win on the savoury front!
Becoming not just my own favourite juice above all else,
but a favourite for many fellow juicers too

2/3 cup Cashews (soaked)
1/2 head Cauliflower (lightly steamed)
2 Carrots (lightly steamed)
1 Lemon
1 clove Garlic
1 sml red Capsicum
1/2 tsp Veggie salt
1/2 tsp Cumin ground
1 cup Water
♨ steaming pot: water, medium-high
steam cauli & carrot separately: set aside to cool
steam cauliflower: 5mins
steam carrot: 3mins
👏 strain: nuts, rinse well
🍥 juice: all ingredients in listed order; except cashews, salt, cumin & water
🍥  blend: nuts & 1/2 cup water, til smooth
add remaining 1/2 cup water, juice, salt & cumin: combine well

2 Cucumbers
1/2 Red Onion
2 cloves Garlic
1/2 cup Green Olives (pitted)
1/3 cup Kalamata Olives (pitted)

1 sml Red Capsicum
1 sml Yellow Capsicum
1/2 tsp Veggie Salt
1 tsp Oregano
1/4 cup EVO oil
🍥 juice: all ingredients in listed order - except salt, oregano & oil
add salt, oregano & oil to juice: combine well

Scrummy Curry Pesto

This pesto, I just happened upon one day when I was making myself a big batch of Curry Tea. I didn't want to simply throw away the curry leaves I had just steeped for my tea ..so I decided to make a pesto with them.

It has been a hit with the dishes I have coupled the pesto with for a combined lunch the next day. PHAB Walnut Loaf and this pesto go scrumptiously together; mixed through some Egyptian Spinach Noodles with EVO & Veggie Salt is delish too!

4 cups Dried Curry leaves (steeped)
1 Red Onion (chopped)
2 cloves Garlic (crushed)
1/3 cup Sun-dried Tomatoes
1 tsp Chinese Five Spice
1/3 cup Coconut (desiccated)
1/2 Lemon (juice)
1 tsp Veggie salt
♨ Pot: bring 2L water to boil
remove from heat, add: curry leaves; leaves submerged
steep (off hot plate): 2hrs, covered
strain: leaves (keep steeped leaf water for Curry Tea)
​🍥  Blend: all listed ingredients & 2/3 cups leaf water
add more leaf water, to desired consistency

This recipe was made for my husband
..and then also named unknowingly by him also;
the name being simply his expression as we sat down to dinner.

I thought there was no better fitting name for it

1/2 orange Sweet Potato (chopped, skin on)
1/2 white Sweet Potato (chopped, skin on)
1 Zucchini (chopped)
1 red Capsicum (chopped)
1 red Onion (diced)
2 stalks Celery (chopped)
500ml Vegetable stock
♨  Pot: medium heat
all ingredients: 20mins
reduce to simmer: 30mins
Serves: 4
*once grated: tomato skins can either be discarded, or chopped and put into the stew

Prepare to be delighted by this vegan bolognese dish;
an hundred percent plant-based meal as well, if you pair it with sqetti as shown..

1 pnt medley Mini tomatoes (halved)
3 stalks Celery (diced)

🍥 Blend: toms & celery, til chunky juicy
Set aside: in separate bowl
4 tbsp Beetroot Relish
 
​1 cup raw Walnuts
1/2 cup Sun-dried Tomatoes
2 cloves Garlic (crushed)
1 Lemon (juice)
2 tsp Ranchero SC seasoning
2 tsp Tamari sauce

🍥 Blend: til a crumble consistency
add: toms celery mix & beetroot relish
blend: til combined, maintain chunkiness
2 cloves fresh Garlic (diced)
3 stems Spring onion  (chopped)
1 handful Inoki (washed) or preferred Mushroom (washed, cut)
1 tsp Veggie Salt
1 tsp Basil
1 tsp Oregano
250g firm Tofu (cubed)

♨ pot: medium heat
Garlic, onion & EVO oil: 4mins
add Inoki/mushroom: +4mins
add toms, celery, relish & walnut mix: +4mins
add salt & herbs: +4mins
add Tofu: +14mins 
Enjoy as pictured, atop Sqetti, or with your own healthy pasta
