I finally found the magic for these Minca Cakes #WIN

1 cup Almond meal
2 eggs
1/4 cup Almond milk
2 tbsp Coconut oil
1 pinch salt
1 tbsp Honey
2 tsp dried White mulberries (chopped)
2 tsp dried Inca berries (chopped)
​👏  bowl: mix all ingredients
​♨  pan: medium-high heat
cook: 1/4 cup of batter, til bubbles
flip & cook: til golden

Aaah!
​Banana & Weetbix.. one of my fave brekkies growing up
When I was on my juice fast and experimenting with different food combinations
..I happened upon creating this smoothie which took me straight back to mornings of my childhood
(and sometimes lunch ..or dinner time hehe)
BUT BONUS 😃 now I can enjoy this dairy-free, gluten-free, healthy smoothie version of it
And guilt free ..for breakfast ..or lunch ..or dinner ..or snack ..or dessert even!

1/6 head Purple Cabbage
1 Cucumber
2 stalks Celery
2 cloves Garlic
3 Carrots
2 tsp Ginger powder

It cannot be stated enough that: every meal should have, begin and end - with Vawaiian!
Growing up, us kids absolutely loved a particular dish that our Mum would make; but because of it's ingredients, it was a rare treat ..and one that suited our kiddy sweet toothes a little too much, if you understand me. Now that I don't do naughty anymore, I determined that this dish shan't depart from my menu. So to cease the blah blah blahs, I introduce to you my [drum roll]
dairy-free, gluten-free, sugar-free, gelatin-free, fully vegan ... Vawaiian Salad!
So healthy compared to the naughty recipe
..that I've taken to having it for breakfast hehe
Yummmaaayyy!!!

500g Nudie Vanilla Coconut Yoghurt*
4 tsp Erythritol**
2 tsp Vanilla Extract**
(I use a Vanilla Vegan Protein Powder to add an extra health kick)
2 tsp Strawberry Powder**
1 tub Shredded Coconut*
440g tin Pineapple Pieces in Juice (NOT syrup)

1 tub Strawberries* (quatered)
1/2 tub Green Grapes* (halved)
1/2 tub Crimson Grapes* (halved)
​👏 bowl: coconut yoghurt, erythritol; combine well°
add: vanilla, strawberry powder; combine well°
add: shredded coconut; using yoghurt tub to measure amount
add: pineapple pieces, including juice; combine well
refrigerate: covered, overnight
👏 next day, add: cut fruit; using  yoghurt tub to measure amount
refrigerate: few hrs before serving; to allow flavours to infuse
Serves: 1 - cause you won't want to share ​😋 hehe 
I jest! I jest! 😄 ..but no seriously ​😏
​* the yoghurt tub is used to measure the coconut & fruit amounts

** these ingredients substitute the key ingredient in the naughty recipe; and successfully so, as the dish made using this recipe tastes identical to the dish made using the naughty recipe; so they're not really omittable. That said, you can omit/substitute if you like - the same flavour just can't be guaranteed 😇 that's all

​1/2 Butternut Pumpkin (peeled, wedges, steamed)
2 Carrots (lightly steamed)
24 Cashews (soaked)
250ml Almond & Coconut Blend Milk
1 tbsp Cashew & Coconut Blend Butter
1 tbsp Almond Butter
1 tsp Cinnamon Ground
1/2 tsp Nutmeg Ground
1 tbsp Coconut Oil (melted)
1/4 tsp Salt
500ml Vegetable Stock
​♨  steaming pot: water, medium-high
steam pumpkin & carrot separately: set aside to cool
steam pumpkin: 30mins
steam carrot: 3mins
​👏  strain: cashews, rinse well
​👏  mash: pumpkin
🍥  juice: carrots
🍥  blend: nuts, milk, butters, spices, oil & salt; til smooth
add mashed pumpkin, carrot juice & vegetable stock: combine well
​♨  pot: gently warm, to desired temp
​Serves: 2

For me, baking should be quick and simple
..and these cookies fit that bill

2 Egg
6 tbsp Coconut oil (melted)
1/4 tsp Salt
2 cups Almond meal
1 cup Coconut (desiccated)
6 tsp Ginger ground
1/2 tsp Cinnamon ground
1/4 tsp Sumac powder
1/4 tsp Chinese Five Spice
2 tbsp Honey
​👏 bowl: beat eggs
add oil, honey & salt: mix well
add almond meal, coconut & spices: mix all ingredients well
❄ refrigerate mixture: at least 30mins (best: overnight)
​♨ oven: preheat 190°
tray: 3cm dough balls (flattened), 3cm space between all
bake: 7mins, til edges start browning
remove: cool before serving

    On February 11th 2018, I bowed in repentance and with a contrite heart before my God.
    Uplifting my tearful plead for forgiveness and intense petition to be a vessel meet for His purpose, I prayed with thankfulness for opening my eyes to the truth.

    I was unaware of the path God had now set my feet upon  👣  Praise the Lord!
    Not only, as the verse says, “old things are passed away; behold, all things are become new”, but He has given me new desires of my heart. [Ps 37:4]
    From one who before had absolutely no interest in time invested in cooking, from one who was bound by seemingly unconquerable attachments to particular foods, from one who though knowing the truth would indulge my lower passions and give in to appetite rather than exercise strength of will and control by exercising higher powers. From this such one.. comes this blog  💞  glory to God!
     
    Through this blog I hope to share the journey that God takes me on in exploring the ‘science above all other sciences’ - cooking! [MM270.6]
    As He leads me into new heights of health exploration, I pray you can join in to partake of the blessings also.
